So, it’s the second week of January. Time for my 2nd meal plan of the year! When we were down in Bowling Green this week I came home with my Granny Lynda’s copies of Taste of Home’s Simple and Delicious magazines for 2006-2007. I love the recipes so we’re trying a couple this week!
Monday 1/7: Three cheese pizza, salad
Tuesday 1/8: Santa Fe chicken, salad, cornbread
2 lbs chicken tenders
2 cans corn
1 can black beans, drained and rinsed
2 cups salsa
1/2 tsp cumin
1/2 tsp chili powder
Combine all ingredients except chicken. Stir to incorporate spices. Place tenders in the crockpot. Top with salsa mixture. Cook on low 6-7 hours or high 3-4 hours. (recipe from mommy cooks)
Thursday 1/10: baked potato soup, rolls
(The recipe for the baked potato soup is kind of involved, but if anyone really wants it let me know and I’ll post it!!!)
Friday 1/11: spaghetti, salad, garlic bread
Saturday 1/12: date night!! (using Longhorn gift card from Christmas!!!!)
Sunday 1/13: whatever meal we don’t get to end up doing due to going to family, etc.
